My dinner tonight was awesome. I thought I'd share.

If you guys would like, I'll keep making my foodnerdery posts in recipe fashion, so you can all enjoy them, too.

Buffalo and Burdock Root Tacos

1 tbsp butter
1 half yellow onion
1 or 2 large burdock roots
1 cup ground buffalo
1 carrot
1 teaspoon cumin
pinch cayenne
salt and pepper to taste
1/4 cup water
corn tortillas
grated pepper jack cheese
spring mix
fresh salsa

-Julienne cut your yellow onion. Set aside.
-Slice your carrot on a very thin bias. Set aside.
-Slice your burdock root, medium slices. Set aside.

Melt butter in a medium (preferably) cast iron or stainless steel skillet.
Add julienned onions and burdock. Cook until onions have partially caramelized. (Caramelizing onions is simple--just brown them deeply, until the onions are sweet and gooey.)
Add buffalo. Cook on medium heat until browned, add spices, and then simmer on low heat.
Add thinly sliced carrots. Cook until barely tender.

Add water as needed, if meat becomes dry. It probably won't, unless it's very lean, but it never hurts to be prepared, right?

Brown corn tortillas over open flame. If you don't have a gas stove, heat your tortillas as you normally would.

Heap buffalo mixture onto tortillas and top generously with grated cheese, spring mix and fresh salsa.

You can also add avocado if you like. :D
